Chicken with Coconut (Srilankan)

Chicken (small pieces) | ½ kg |
Ginger Paste | ½ table spoon |
Garlic Paste | ½ table spoon |
Salt & Black Pepper | To taste |
Red chili powder | ½ tea spoon |
Cinnamon Stick | 2 |
Onion (circular cut) | 2 medium |
Green Chilies (finely sliced) | 7 to 8 |
Garam Masala | 1 tea spoon |
Coconut (freshly grated) | 1 cup |
Coriander Powder | 1 tea spoon |
Coconut Milk | 1 cup |
Tomatoes (chopped) | 2 to 3 |
Oil | 2 to 3 table spoon |
Lemon Juice | 1 tea spoon |
Lemon Rind | For garnishing |
Coriander Leaves | For garnishing |
1. Marinate chicken with ginger paste, garlic paste and other spices for about an hour. |
2. Brown the onions and stir fry the marinated chicken on medium flame. |
3. Add cinnamon sticks and tomatoes and stir for a while. |
4. Pour in the coconut milk & grated coconut and let simmer for another 5 to 6 minutes. |
5. Add the lemon juice and cook till chicken is tender. |
6. Garnish with lemon rind, mint leaves and coriander leaves. |
7. Serve with plain or jasmine rice. |
