Berry Sorbet
Time of preparation: 50 Minutes
Time of cooking: 20 minutes (Serves 8)
Blueberries, or blackberries | 3 cups |
Raspberries, or strawberries | 3 cups |
Water | 2 cups |
Sugar | 1 ½ cup |
Lemon juice | 1 to 2 tablespoon |
1. In a medium pan, add black berries, raspberries and 1 cup water. Heat over medium heat and bring to boil. Reduce heat and simmer for 5 minutes. |
2. Strain mixture through a fine sieve and press on sieve with the back of a spoon. Return mixture to a clean pan. |
3. Add remaining water, sugar and lemon juice. Heat over low heat until sugar dissolves stirring constantly. Remove from heat and leave to cool. |
4. Move mixture to a metal container and cover with plastic wrap or waxed paper. Freeze for 2 hours. |
5. Transfer mixture to a bowl. Beat with an electric beater then return to metal container, cover and freeze again. Repeat this process again then freeze until firm. |
