Carrot & Coconut Cake

Time of cooking: 50 Minutes
Flour | 1 cup |
Baking Powder | 1 ½ tea spoon |
Soda Bi Carbonate | ½ tea spoon |
Eggs | 4 |
Ground Sugar | 1 cup |
Oil/ Butter | ¾ cup |
Carrot (shredded, dried on flame) | ½ cup |
Vanilla/ coconut essence | Few drops |
Grated Coconut | ½ cup |
1. Sift together flour, baking powder and soda. |
2. Beat together eggs and sugar. |
3. Add oil or softened butter slowly. |
4. Fold in the flour at low speed. |
5. Now add carrot, coconut & coconut essence and mix a little. |
6. Bake for 40 – 45 minutes at 150° – 200° C/ 300° – 400° F/ Gas mark 4. |
7. After the cake cools down butter icing topped with walnut. |
