Chocolate Mud Cake

Dark chocolate, broken into pieces | 500 grams |
Eggs (beaten) | 4 |
Butter | 250 grams |
Cocoa powder | ½ cup |
Vegetable oil | 2 table spoon |
Flour | 2 ½ cups |
Baking soda | ½ tea spoon |
Instant coffee | 2 table spoon |
Sugar | 2 ½ cups |
Double cream | ½ cup |
Buttermilk | ½ cup |
1. In a saucepan, heat butter, instant coffee, ½ quantity of chocolate and ¾ cup water over low heat until butter and chocolate melt and mixture is smooth. |
2. Sift flour, cocoa powder and baking soda in a bowl. Stir in 2 ½ cups sugar then add eggs, buttermilk and oil. Stir all ingredients together using a spoon. Add melted chocolate mix and mix until well combined. |
3. Heat oven to 160° C. Butter a 23 cm baking pan. Pour batter in pan and bake for 1 hour and 40-50 minutes or until a knife comes out clean when inserted in the middle of cake. Remove from oven and leave to cool completely. Remove from pan and leave to cool on a wired rack. |
4. In a small saucepan, put remaining chocolate, cream and 2/3 cup sugar. Heat over low heat until chocolate melts and bring to boil. Reduce heat and simmer for 5 minutes. Remove from heat and leave to cool. |
5. Put cake on a serving platter and coat top and sides evenly with chocolate glaze. Decorate in any way you like. |
