Mutton Pilao

Mutton | ½ kg |
Water | 6 to 8 cups |
Fennel Seed (saunf) | 1 table spoon |
Red Chillies Whole | 3 to 4 long |
Coriander Seed | 2 tablespoon |
Bay Leaf | 2 |
Cardamom | 4 to 5 |
Ginger (sliced) | 1 inch piece |
Garlic | 4 to 5 cloves |
Black pepper Whole | 4 to 5 |
1. Tie all the whole spices in a muslin cloth. |
2. Put all the ingredients in the water and bring to a boil for half an hour. |
Rice | 4 cups |
Onion | 1 medium |
Cardamom | 2 to 3 |
Cinnamon stick | 1 inch piece |
Ginger (chopped) | ½ teaspoon |
3. Fry the onion in ghee and remove from the pan once golden and keep aside. |
4. Fry the whole spices, garlic, raisins and then the meat only from the yakhni. |
5. Now add the soaked rice and stir a little and add 4 cups of stock (yakhni) |
6. Garnish with the fried onions and serve with raita. |
