Quesadillas with guacamole

Time of cooking: 20 Minutes
Cheddar or Red Leicester cheese (grated) | 1 cup |
Fresh Coriander (chopped) | A few sprigs |
Spring Onion | 4 |
Red Pepper | 1 |
Red or Green Chilli | 2 |
Tortillas | 1 pack |
Sour cream | To serve |
Guacamole | To serve |
1. To fill the quesadillas add grated Cheddar and/or Red Leicester cheese, spring onions, coriander, a red pepper and some red or green chillies. |
2. Mix all this up in a bowl and then sprinkle half a handful between two layers of tortilla. |
3. Grill these or put them in a dry non-stick frying pan on a medium heat, so that after about a minute and a half on each side you are left with a really crispy outside and an oozy, stringy filling. |
4. Serve the quesadillas cut into quarters, with the guacamole and soured cream. |
Tips; You can also posh them up a bit using grilled chicken or seafood, shellfish, or a selection of grilled vegetables. |
